- Frying Oil
- Cayenne Pepper
- Red Onions, finely diced
- Parsley, finely chopped
- Garlic, finely chopped
- Heat oil to a minimum of 350°
- Use a small scooper to scoop the batter.
- Dip balls of the mixture into the hot oil.
- Fry until golden brown.
- For the remoulade sauce, combine mayonnaise, cayenne, lemon, capers, finely diced red onions, parsley, and garlic in a medium bowl. Add lemon juice and season with salt & pepper.
- Serve over a bed of arugula along with the remoulade sauce.
