- 12 oysters, smoked
- 2 cups chilled cottonseed oil (You may substitute with extra virgin olive oil.)
- 4 egg yolks
- 1 lemon, juiced
- ¼ cup fresh parsley
- 1 tablespoon salt
- 1 tablespoon pepper
- Put yolks in a food processor and start blending.
- Drizzle in chilled oil while blending.
- Add lemon juice, then parsley.
- Add salt & pepper to taste.
- Blend until smooth.
- Use as a substitute for mayonnaise on sandwiches.
