Ingredients:

  • 12 oysters, smoked
  • 2 cups chilled cottonseed oil (You may substitute with extra virgin olive oil.)
  • 4 egg yolks
  • 1 lemon, juiced
  • ¼ cup fresh parsley
  • 1 tablespoon salt
  • 1 tablespoon pepper

Instructions:

  1. Put yolks in a food processor and start blending.
  2. Drizzle in chilled oil while blending.
  3. Add lemon juice, then parsley.
  4. Add salt & pepper to taste.
  5. Blend until smooth.
  6. Use as a substitute for mayonnaise on sandwiches.
