Ingredients:
- Wahoo Wheels
- Wheat flour
- Salt
- Whole black pepper
- Ground black pepper
- Oil
- 5 garlic cloves
- Oregano
- 1 each red, orange, and yellow bell peppers
- Parsley
- Carrot
- Red and White Onions -1 of each
- Bay leaves
- Green and black olives
- Paprika
- 1 glass White wine
- 1 glass White vinegar
- 1 cup Water
Instructions:
- Season the Wahoo steaks with salt and pepper.
- Dredge through the flour, removing as much excess as possible.
- Heat the oil and sear the fish wheels.
- Let them cool and place them in a glass container.
- In the same oil where we browned the fish, add the whole crushed garlic, then add onions, peppers, carrots, bay leaf, whole pepper, olives, and finally the paprika.
- Cook everything over low heat for 5 minutes and season again,
- Once everything is cooked, pour the escabeche mixture over the Wahoo steak.
- Let cool to room temperature and then refrigerate to serve the next day.
- Serve with crispy green plantain chips.
