Ingredients:

  • Wahoo Wheels
  • Wheat flour
  • Salt
  • Whole black pepper
  • Ground black pepper
  • Oil
  • 5 garlic cloves
  • Oregano
  • 1 each red, orange, and yellow bell peppers
  • Parsley
  • Carrot
  • Red and White Onions -1 of each
  • Bay leaves
  • Green and black olives
  • Paprika
  • 1 glass White wine
  • 1 glass White vinegar
  • 1 cup Water

Instructions:

  1. Season the Wahoo steaks with salt and pepper.
  2. Dredge through the flour, removing as much excess as possible.
  3. Heat the oil and sear the fish wheels.
  4. Let them cool and place them in a glass container.
  5. In the same oil where we browned the fish, add the whole crushed garlic, then add onions, peppers, carrots, bay leaf, whole pepper, olives, and finally the paprika.
  6. Cook everything over low heat for 5 minutes and season again,
  7. Once everything is cooked, pour the escabeche mixture over the Wahoo steak.
  8. Let cool to room temperature and then refrigerate to serve the next day.
  9. Serve with crispy green plantain chips.
