Ingredients:

Confetti Slaw

  • Green Cabbage, diced
  • Fresh Corn, oil, seasoned with salt, chili powder and roast
  • Edamame, shelled
  • Red bell pepper, diced
  • Poblano pepper, diced
  • Red Onion, diced
  • Garlic, chopped
  • Flat parsley, chopped

Slaw Dressing

  • Green Cabbage, diced
  • Fresh Corn, oil, seasoned with salt, chili powder and roast
  • Edamame, shelled
  • Red bell pepper, diced
  • Poblano pepper, diced
  • Red Onion, diced
  • Garlic, chopped
  • Flat parsley, chopped

Old Bay Remoulade

  • Mayonnaise
  • Grain mustard
  • Shallots, minced
  • Garlic, minced
  • Anchovy
  • Capers
  • Cornichons
  • Lemon Juice
  • Flat parsley
  • Old Bay Seasoning
  • Salt & pepper

Instructions:

  1. For the confetti slaw, take all of the ingredients and slaw dressing and fold them together.

  2. For the remoulade, chop the anchovies, capers, cornichons and parsley fine and blend all of the ingredients.

  3. Place into serving container layering with confetti slaw on the bottom, followed by Panko Cobia Bites and topped with Old Bay Remoulaude  as seen in the image.
