Whole Fried Grouper w/ Tartar sauce

Ingredients

  • 4 NETUNO Whole Grouper
  • Vegetable Oil (or any oil suitable for frying)
  • Salt & Pepper
  • 1 Red Pepper, chopped
  • 2 tablespoons of Capers
  • 2 tablespoons of Olives, chopped
  • 1 Banana Pepper, chopped
  • ½ Bunch of Fresh Parsley, chopped
  • 1 Red Onion, diced
  • 1 teaspoon of Paprika
  • 2 Limes, 1 quartered & 1 juiced
  • 1 cup Mayonnaise
  •  Fresh Herbs (Optional, for garnish)

Instructions

  1. Pat dry the whole grouper.
  2. Season with salt & pepper to taste.
  3. Deep fry in vegetable oil at 365°F.
  4. Make sure the entire fish is soaked in oil and baste with a metal spoon or cup.
  5. Turn the fish to cook evenly on both sides.
  6. Once the fish is entirely browned, remove from the oil to a plate.
  7. Optional: Place on a plate lined with paper towels to drain excess oil before final plating.

Tartar Sauce Instructions

  1. Combine mayonnaise with lime juice in a bowl.
  2. Incorporate the following ingredients and mix until smooth:
    • Red Pepper
    • Capers
    • Olives
    • Banana pepper
    • Parsley
    • Red Onion
    • Paprika
  3. Plate fish with lime wedge, tartar sauce, and garnish with fresh herbs.
