- Pat dry the whole grouper.
- Season with salt & pepper to taste.
- Deep fry in vegetable oil at 365°F.
- Make sure the entire fish is soaked in oil and baste with a metal spoon or cup.
- Turn the fish to cook evenly on both sides.
- Once the fish is entirely browned, remove from the oil to a plate.
- Optional: Place on a plate lined with paper towels to drain excess oil before final plating.
Tartar Sauce Instructions
- Combine mayonnaise with lime juice in a bowl.
- Incorporate the following ingredients and mix until smooth:
- Red Pepper
- Capers
- Olives
- Banana pepper
- Parsley
- Red Onion
- Paprika
- Plate fish with lime wedge, tartar sauce, and garnish with fresh herbs.
