- Combine passion fruit pulp, white wine, water, sugar and the half shallot
- Simmer and reduce until slightly thickened.
- Remove the shallot.
- Whisk in 3–4 tbsp cold unsalted butter to finish the sauce.
- Pat dry the Paima (Paiche) fillets and season with salt and pepper.
- Sear fish 2–3 minutes per side.
- Spoon the passion fruit sauce over the fish.
