Paima Fillet Passion Fruit Glaze (Maracujá)

Ingredients

  • 2 NETUNO Paima Center Cut Fillets
  • Salt and black pepper
  • 1 tbsp neutral oil
  • 1/2 cup passion fruit pulp with juice
  • 1/2 cup dry white wine
  • 1/2 cup water
  • 1/2 shallot
  • 1 1/2 tbsp sugar
  • 3–4 tbsp cold unsalted butter

Instructions

  1. Combine passion fruit pulp, white wine, water, sugar and the half shallot
  2. Simmer and reduce until slightly thickened.
  3. Remove the shallot.
  4. Whisk in 3–4 tbsp cold unsalted butter to finish the sauce.
  5. Pat dry the Paima (Paiche) fillets and season with salt and pepper.
  6. Sear fish 2–3 minutes per side.
  7. Spoon the passion fruit sauce over the fish.
