- Preheat a cast iron to a sizzling hot temperature.
- Season branzino fillets with salt and pepper.
- Place butterflied branzino fillets skin down in the iron for 3 minutes, then flip and sear for 2 minutes.
- Remove the fillet from the cast iron and add the heavy cream, capers, and shallots to the pan. Add salt and pepper to taste and whisk slowly until thickened.
- Add the fillet back to the pan and baste with the sauce for one minute.
- Serve with rice pilaf or your choice of side.
