Ingredients

  • 2 NETUNO Paima Loin Cut Fillets
  • Salt and black pepper
  • 2 tbsp palm oil (azeite de dendê)
  • 1/3 cup leeks, sliced
  • 1/4 cup shallots, chopped
  • 2 garlic cloves, chopped
  • 1/3 cup red pepper, diced
  • 2 tbsp tomato paste
  • 1–1½ cups coconut milk
  • 1/2 cup bone broth
  • Parsley, cilantro, scallions
  • Fresh Lime

Instructions

  1. Sauté leeks, shallots and garlic in palm oil.
  2. Add red pepper and tomato paste and cook briefly.
  3. Deglaze with bone broth and add coconut milk.
  4. Season and simmer the sauce.
  5. Add pirarucu pieces and cook gently until just done.
  6. Finish with herbs and a few drops of lime.
