Ingredients:

  • 1 lb. NETUNO Seafood Mix
  • 1 cup chopped onion
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 cup uncooked long grain rice
  • ½ teaspoon ground turmeric
  • 1 can (14.5 oz) reduced-sodium chicken broth
  • ¾ cup water
  • 1 cup frozen peas
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon chopped parsley

Instructions:

  1. In a large nonstick skillet, sauté onion and garlic in oil until tender.
  2. Add rice and turmeric; stir to coat.
  3. Stir in broth and water and bring to a boil. Reduce heat; cover, and simmer for 10 minutes.
  4. Stir in NETUNO seafood mix along with the remaining ingredients, except the parsley. Simmer for at least 5 minutes more or until rice is tender.
  5. Sprinkle the parsley on top and serve.
