For the fruit sauce:

Ingredients:

  • 1 Mango
  • 1 Papaya
  • 1 Pineapple
  • 1 Red onion
  • 1 Red pepper
  • 1 tablespoon fresh coriander
  • ½ cup Lemon juice
  • ¼ cup Olive oil
  • Salt & pepper to taste

For the golden quinoa:

Ingredients:

  • 2 cups of cooked quinoa
  • ¼ cup Olive oil
  • Raisins or cranberries*
  • Sliced almonds
  • 1 tablespoon fresh coriander
  • 1 Red pepper
  • 1 yellow pepper
  • 3 Carrots

For the fruit sauce:

Instructions:

  1. Finely chop all the ingredients.
  2. Season with olive oil, lemon juice, salt, and pepper.
  3. Stir all together.

For the golden quinoa:

Instructions:

  1. Heat some olive oil on a pan and sauté the cranberries and almonds for a couple minutes.
  2. Add the peppers and carrots and combine.
  3. Incorporate the cooked quinoa and fresh coriander and mix well.
