For the fruit sauce:
Ingredients:
- 1 Mango
- 1 Papaya
- 1 Pineapple
- 1 Red onion
- 1 Red pepper
- 1 tablespoon fresh coriander
- ½ cup Lemon juice
- ¼ cup Olive oil
- Salt & pepper to taste
For the golden quinoa:
Ingredients:
- 2 cups of cooked quinoa
- ¼ cup Olive oil
- Raisins or cranberries*
- Sliced almonds
- 1 tablespoon fresh coriander
- 1 Red pepper
- 1 yellow pepper
- 3 Carrots
For the fruit sauce:
Instructions:
- Finely chop all the ingredients.
- Season with olive oil, lemon juice, salt, and pepper.
- Stir all together.
For the golden quinoa:
Instructions:
- Heat some olive oil on a pan and sauté the cranberries and almonds for a couple minutes.
- Add the peppers and carrots and combine.
- Incorporate the cooked quinoa and fresh coriander and mix well.
